  • 1 Teaspoon garam masala (optional)
  • 1 Teaspoon turmeric powder
  • 500 grams (1.1 pounds) meat or vegetables of your choice, diced (e.g., chicken, beef, shrimp, tofu)
  • 4 Cups cooked rice
  • 4 Cups water or vegetable/chicken broth
  • Salt and pepper to taste
  • Optional toppings: boiled eggs, pickles, chopped green onions

Instructions:

  1. Heat the vegetable oil in a large pot or pan over medium heat.
  2. Add the diced onions and cook until they become translucent.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Add the diced carrots and potatoes to the pot and cook for a few minutes until slightly softened.
  5. Push the vegetables to one side of the pot and add the curry powder, garam masala (if using), and turmeric powder to the empty space. Toast the spices for a minute or two until fragrant.
