About Fiorentina Steak
Fiorentina Steak, also known as Bistecca alla Fiorentina, is a traditional Tuscan dish made with a large, thick T-bone steak from the Chianina breed of cattle. The steak is seasoned simply with salt, pepper, and olive oil and then grilled over hot coals. It is typically served rare or medium-rare and is often shared among several people.
Fiorentina Steak is a beloved dish in Florence and is often paired with a robust red wine from the region.
Ingredients:
4 T-bone steaks (about 2 pounds each)
1/4 cup olive oil
4 cloves garlic, minced
2 sprigs rosemary, chopped
2 sprigs thyme, chopped
1/2 lemon
Salt and black pepper to taste
Instructions:
1. Take the T-bone steaks out of the refrigerator and let them come to room temperature, which usually takes about 30 minutes.
2. Preheat the grill to high heat (about 450-500°F).
3. Season the steaks generously with salt and black pepper then drizzle olive oil over each steak, and rub it into the meat.
4. Grill the steaks for 4-5 minutes on each side for rare to medium-rare doneness.
5. In a small bowl, mix together the garlic, rosemary, and thyme.
6. When the steaks are almost done, sprinkle the herb mixture over them and grill for an additional 1-2 minutes on each side.
7. Squeeze the juice of half a lemon over the steaks and remove them from the grill.
8. Let the steaks rest for 5-10 minutes before slicing and serving.
Tips for bistecca alla Fiorentina
•Choose the right cut: For a true Fiorentina steak, you’ll want to use a T-bone or Porterhouse steak that is at least 1.5 inches thick.
•Season generously: Don’t be shy when it comes to seasoning your steak. Use plenty of salt and pepper to bring out the natural flavors of the meat.
•Use high heat: A hot grill or skillet is key to achieving a nice sear on the outside of the steak while keeping the inside juicy and tender.
•Let it rest: After cooking, be sure to let your steak rest for a few minutes before cutting into it. This will allow the juices to redistribute and ensure that each bite is as tender and flavorful as possible.
•Serve simply: Fiorentina steak is all about the meat, so keep the sides simple. A side of arugula with lemon and olive oil is a traditional accompaniment.
•Cook to your desired doneness: Fiorentina steak is traditionally served rare, but feel free to cook it to your liking. Just keep in mind that a thicker cut of steak may take longer to cook.
